Typically, I just close the vent and let it burn out but if you need to cool it down faster you can also pour / spray some water over the fire and pour some cold water over the stove to cool it down.

I just let it burn out, I keep the vent wide open and I also don’t add anymore wood after a certain point so that by the time I’m done it is just big cinders that are burning off
